~Brownie Bites~

Just a Thought~

I made these today for our Cub Scouts cookout. They were a huge hit!

*** Tips – If you don’t have more than 2 pans (like me) pop the pan into the freezer, to help cool the brownies before removing them from the pan. Try not to let them over cook. When they are cooled, you’ll end up with a hard brownie. Also, if you put more than a teaspoon in the cups, the mix will grow like a cup cake. If this happens, you may not be able to remove the brownie, without if falling apart.


~Brownie Bites~

1 2/3 cups sugar
3/4 cup butter (1 1/2 sticks) melted
2 Tbsp water
2 large eggs
2 tsp vanilla
1 1/3 cup self rising flour
3/4 cup Cocoa

Preheat oven to 350 degrees. Grease mini muffin pans.

Combine sugar, butter and water in mixing bowl. Stir in eggs and vanilla extract. Mix well. Add flour and cocoa. Mix well. Using a teaspoon, scoop mixture into muffin pan. Bake for about 10 minutes. Let cool completely before removing from pan.
