Mixed Vegetable Casserole

Just a Thought ~

This is not the best picture… but you have to try this recipe. The first time I tried making this my husband and son loved it so much that they asked for it again the next night.
This is a perfect dish for a pot luck at church or for a reunion.

Mixed Vegetable Casserole

2 (15 ounce) cans mixed vegetables, drained
1 small onion, diced
1 can condensed cream of chicken soup
1/2 cup mayonnaise
1/2 cup sour cream
1 cup shredded Cheddar cheese
1 sleeve Ritz crackers, crushed

Preheat oven to 350 degrees .
In a medium bowl combine the mixed vegetables, onion, soup, mayonnaise, sour cream and cheese. Mix well and spread mixture into a 9×13 inch baking dish. Top with the cracker crumbs.Bake about 30 minutes, or until browned and bubbly.

 If you don't have the Ritz crackers you can use saltine crackers and 1/4 stick of butter- melted, mix together and sprinkle on top.
