KID FRIENDLY INSIDE OUT SHEPHERD’S PIE
I love this recipe! It is easy, quick, tasty and the best part it is a frugal meal. Frugal and tasty are the best kind of recipes! On top of all that goodness, it is kid friendly.
A recipe like this can be tweaked for your preference. I normally don’t cook beef, but rather use venison or ground turkey. As for the vegetables, I use frozen instead of canned. So you see whatever you normally use will work. I used 3 cups of broth to make my gravy, but depending on how many you are feeding, you can always use more or less.
Inside Out Shepherd’s Pie
Ingredients:- 1 pound ground meat
- 1 small onion diced
- 1 bag (1 lb) frozen mixed veggies or 2 cans, drained
- 1 cup super sweet corn ** Optional
- 3 cups beef broth
- 2 - 4 Tablespoons flour
- Salt, Pepper, and Garlic Powder to taste
- Hot mashed potatoes
Directions:
In a frying pan cook meat and onion and add the seasoning, drain grease. Add vegetables and all the broth except for a ½ cup. Bring meat, vegetables, and broth up to medium – high heat for vegetables to cook, if using frozen. (If using canned, then just add them to the meat and broth.)
In a small container, mix flour with the reserved broth. Whisk well, if needed add a little water to thin the mixture down. Add the flour mixture to the pan of meat mixture and stir, making sure no lumps form. Simmer until gravy thickens. Serve over mashed potatoes.
