I came up with this recipe about ten years ago after eating something similar in a local restaurant. The original dish had chicken and sausage and it was out of this world! While eating, I wrote down everything I saw in the dish and those that I could only taste. That dish had both chicken and sausage. Having both types of meat in the dish is awesome. But using only one of either is not a disappointment. Your taste buds will thank you no matter how you prepare the dish.

Normally, I only cook it with either chicken or sausage, it depends on what I want to prepare for my family. The day I took pictures for this post, I only used the sausage, with no one disappointed.

I know what you are thinking! Rattlesnake?! Let me tell you that if I have to worry about being bitten by a rattlesnake, there is no way on this earth that I would even think about eating one! At least not while I have food in the cabinets. Rattlesnake Pasta is a type of chicken alfredo with bite. A huge bite depending on the type of peppers you use. I made Unstuffed Stuffed Bell Peppers on Saturday for the first time. When I share a recipe, I usually cook it more than once just to be sure I have the ingredients correct and my family approves of the recipe. I don’t take pictures during the first run since I don’t want to create a picture and us not love the food enough for the recipe to be shared. Something told me to grab the camera and take pictures even after I put everything in the pan. I’m glad I did, this recipe is fantastic!

Southern Venison Hash

The first time I ate Southern Venison Hash was at a Missions Conference in South Carolina. It was cooked in a way there was disbelief among a few that it was deer. It was so good I asked the pastor for the recipe; it’s discouraging when you hear the words “I don’t really have a recipe, it’s a little of this and a little of that”. I don’t know why I was saddened at the response because I tend to cook that way most of the time. If you are not a fan of venison or don’t have any on hand, you can substitute it with beef. A roast or stew meat would be perfect!

Pork Chops and Potatoes are a favorite dish in my kitchen. Seventeen years ago, my little kindergarten class made a cookbook to give their moms for Mother’s Day that year. Believe it or not of all the classes I ever taught, this group of parents was on top of things. When I sent the note home asking for a family favorite recipe, they started rolling in the next morning. If I remember correctly, I did not have to send any reminder notes about the recipes. For those moms who read my blog (you know who you are), you did well!

Homemade Fajita Seasoning

We’ve been enjoying grilled fajitas every other week during the winter months. We LOVE Mexican food! We had two big deer put in the freezer last fall; the biggest was sent to the processor and we ended up with countless packages of steaks. Those steaks have been used for our fajitas and they have been super tender and moist. No store bought packet can compare to Homemade Fajita Seasoning.

My husband knows my love for Mexican foods.  In fact, this month there have been more Mexican dishes served than normal since this has been a month of experiments with meatless recipes. Teriyaki Stir Fry

I'm sharing with you another new family favorite recipe... TERIYAKI STIR FRY. My friend Rhonda led me to the IDEA of this recipe. While knowing the tastes of my family, I knew just soy sauce, salt and garlic powder in the recipe were not going to win them over,so  I had to do something else. We love Chinese saucy foods, and before we moved here we had a favorite Chinese buffet that served a teriyaki noodle dish, so I decided to make a teriyaki sauce to go the noodles and vegetables. What a dish, it is dee-lish!

I am in LOVE! Since I am trying new recipes that are frugal and meatless, I have come across the second recipe that has quickly become one of our favorites. All it took was one bite and we were hooked. Of the last three new recipes I cooked, CHEESY PASTA BAKE is a real humdinger!

While we are NOT vegetarians but rather a carnivorous family (we love meat) we have tried several new recipes over the past two weeks that calls for no meat.  After listening to a radio program this afternoon, I know we are not the only family who is looking for other means of healthy, wholesome meals without squeezing extra dollars out of the grocery budget. So, no meat it is!

If you are within a hop, skip and jumping distance from the grocery store, you need to make this dish very soon. Do Not, I repeat DO NOT wait around to make this recipe. You will be insane if you do and if you pin this recipe, be sure you do not forget about it. I know I am the only one who pins scrumptious looking recipes to only forget about them until I scroll through my Pinterest boards. I'm the only one, right?

I love alfredo sauce and I like a really good marinara sauce. What I REALLY love is mixing them. Who knew they would be so good... TOGETHER?  When I buy any pasta sauce, I normally buy Bertolli; it is our favorite store-bought brand. If you are not like me and like brown, crispy pasta noodles, cover your baking dish before placing it in the oven.


 Cheesy Pasta Bake

1 box penne pasta
1 jar Alfredo sauce
1 jar Marinara sauce
2 cups shredded mozzarella cheese
1 cup shredded parmesan cheese

Preheat oven to 350 degrees. Cook pasta according to directions and drain. Mix the sauces together in a large bowl. Add the mozzarella and stir to combine. Then add the pasta and toss to coat. Pour mixture into a 9x13 baking dish and cook for 20 minutes or until bubbly. Remove from oven and sprinkle with shredded parmesan cheese and bake for another 5 minutes.

So YUMMY!

I can not wait to make this again. There are a couple of changes I do want to try like adding a little chicken and using my homemade sauces. If you make this, let me know, I'd love to hear how you like it.
